Healthy Quick and Easy Dessert
My brother-in-law is vegan, so whenever he comes over, I am always looking for ideas on what to serve. The last time he visited, I wanted to find a dessert that was both delicious, and easy to make. I settled on a chocolate mousse and let me tell you, it was fool-proof and everyone enjoyed it. By the end, all our guests were asking for the recipe, so I thought I’d share it with you all.

Serving:
Serves 2-4 people.
Ingredients:
- 1 can of coconut cream (refrigerated overnight)
- 1/4 cup of icing sugar (or sweeten to your liking)
- 1 tablespoon of raw organic cacao powder
Instructions:
- Separate the liquid from the solidified coconut cream (you can save the liquid for future recipes, but for this one, you will only need the solidified cream).
- Place the coconut cream into a medium size mixing bowl.
- Add in your 1/4 cup of Powdered Sugar
- Add in 1 Tbsp of Cacao Powder
- With a hand mixer, whip together your mixture until it is nice and fluffy. (Can be done by a whisk but recommend to use a hand blender- I used the KitchenAid 5-Speed Hand Mixer
- Scoop and serve!
Steps:
Separate the liquid from the solidified coconut cream
Place the coconut cream into a medium size mixing bowl.
Add in your 1/4 Cup of Powdered Sugar
Add in 1 Tablespoon of Cacao Powder
Whip together using a hand blender until your mixture is fluffy.
Scoop and serve!
Optional: Set in the fridge for 10 minutes. Sift cacao powder for finishing touches
This is a great recipe. Plus it’s healthy, so I don’t feel like a slob after eating it!
