Healthy Quick and Easy Dessert

My brother-in-law is vegan, so whenever he comes over, I am always looking for ideas on what to serve. The last time he visited, I wanted to find a dessert that was both delicious, and easy to make. I settled on a chocolate mousse and let me tell you, it was fool-proof and everyone enjoyed it. By the end, all our guests were asking for the recipe, so I thought I’d share it with you all.

Serving:

Serves 2-4 people.

Ingredients:

  • 1 can of coconut cream (refrigerated overnight)
  • 1/4 cup of icing sugar (or sweeten to your liking)
  • 1 tablespoon of raw organic cacao powder

Instructions:

  1. Separate the liquid from the solidified coconut cream (you can save the liquid for future recipes, but for this one, you will only need the solidified cream).
  2. Place the coconut cream into a medium size mixing bowl.
  3. Add in your 1/4 cup of Powdered Sugar
  4. Add in 1 Tbsp of Cacao Powder
  5. With a hand mixer, whip together your mixture until it is nice and fluffy. (Can be done by a whisk but recommend to use a hand blender- I used the KitchenAid 5-Speed Hand Mixer
  6. Scoop and serve!

Steps:

Whip together using a hand blender until your mixture is fluffy.

Scoop and serve!

Optional: Set in the fridge for 10 minutes. Sift cacao powder for finishing touches
