I started craving a bunch of home cooked Chinese food once I moved over an hour away from home. So when I had to make baby food for my 9 month old daughter, I thought what better way to double it up and make a dessert for us too!
This dessert is perfect for the cold days. It warms up your insides and the ginger boosts your immune system too.
Serving:
Serves 2-3 people.
Ingredients:
- 4 large sweet potatoes (peeled and cubed)
- 6 slices of ginger (add according to your preference)
- 1/2 a stick of brown sugar and/or rock sugar
Instructions:
- Place the ginger slices in a pot with 8 cups of water.
- Once the water reaches a boil, add in your cubed sweet potatoes.
- When the sweet potatoes are fork tender, add in half a stick of brown sugar.
- Stir until the sugar has melted completely
- Serve and enjoy!
Steps:
Peel and dice the sweet potatoes and ginger.
Boil water with the ginger slices
Throw in the sweet potatoes when the water is boiling.
Bring the water to a boil again then test the sweet potatoes with a fork to see if they’re soft to your liking.
Add your sugar of choice.
I prefer the brown sugar because it gives it a nice golden colour. You can also use a mix of both.
